This salad is great topped with hot smoked salmon or goats cheese or as a side to your Sunday roast lamb.
Tahini, Coconut and Chai Bliss Balls
I love bliss balls, but spending $4 on a bliss ball doesn't make sense when they're so easy to make.
These ones are great as they're a little different with the tahini and are nut free.
Fish roasted in capers and lemon butter
I saw in my Instagram feed this week that Donna Hay's Off the Shelf cookbook celebrated its 15 anniversary this month, I don't have the first edition of this cookbook, but it was one of the first cookbooks I received. So it is only right I share one of my favourite fish recipes from the book - easy, buttery and a kick of salt thanks to the capers.
Tray-baked Paprika Chicken with Cauliflower, Feta and Olives
This has been my go-to chicken dish over the past few months. Great to make after work, but it's also a hit when having family and friends over for dinner.
I love the fact that it is also full of vegetables, only uses one tray and also has a hit of salty feta.
Chicken with Marsala Cream and Mushrooms
This is a Moorish dish, full of flavour with marsala and cream; it's on high rotation at the moment in my house as it is quick mid week meal.
I serve it one of two ways:
1) by itself with lots of green vegetables 2) stirred through wholemeal pasta (my current favourite)
Bubur Pulut Hitam
I'm not normally a fan of rice pudding, but this Black Glutinous Rice Dessert is tasty. I love the flavour from the pandan leaf and the richness from the coconut milk.
I've been told you can use red or mung beans can be used instead of the black rice, but if using mung beans use palm sugar instead.
Char Koay Teow
Whenever I get a noddle takeaway, it is always the Char Kow Teow, but after attending LaZat cooking school and knowing how easy it is to make, I will now be making this myself.
I love the home made chilli paste, it has a real kick and is complimented with lots of fresh aromatics. This is new regular in our house and it is easy to mix it up by changing the protein.
Crab San Chou Bau
This has to be one of the freshest dishes I've ever made; it's easy, tasty and light.
This is another little wonder from the Lazat cooking school, Ana the owner also suggests swapping the crab for prawns, chicken, pork or beef; just add them in after adding the garlic and ginger.
Chicken & Prawn Wontons
I've just been in KL and went to an amazing cooking school, LaZat and they taught me the most delicious Chicken & Prawn Wontons. I never knew that such little parcels can provide so much flavour and better still they're really easy to make, it just comes down to using really fresh ingredients.
Although we fried them on the day, they are tasty boiled or added to your favourite Asian broth.
Peanut Butter and Chia Bites
Pre gym snack time! These little balls are super easy to make and give you a little boost before hitting the gym.
