I'm not normally a fan of rice pudding, but this Black Glutinous Rice Dessert is tasty. I love the flavour from the pandan leaf and the richness from the coconut milk.

I've been told you can use red or mung beans can be used instead of the black rice, but if using mung beans use palm sugar instead.

Ingredients

  • 40 g Black Glutinous Rice (wash and rinse)
  • 2 l Water
  • 1 piece Pandan Leaf
  • 50 g Sugar
  • 100 ml Coconut Milk
  • ¼ tsp Salt

Instructions

    Place black glutinous rice, water and pandan leaf in a pot and cover a bit until it starts boiling. Then tilt and remove cover entirely.

    Cook on medium heat for approximately or until black rice is soft and broth becomes thicken.

    Add in sugar and let it boil until sugar dissolves, occasionally stirring it.

    Then add in salt and coconut milk, stir for a few seconds and off the heat.

    Serve either hot or cold.
