Wild Rice Cabbage Chickpea Pilaf

Ingredients

  • ½ cup wild rice
  • 1 medium carrot, grated
  • 1 small red bell pepper, diced small
  • 2 tbsps ginger, grated
  • 1 ½ cups green cabbage, chopped
  • 1 cup chickpeas, cooked
  • 1 bunch green onions (white and green parts) thinly sliced
  • 3 tbsps cilantro, chopped
  • salt and ground pepper to taste

    Bring 2 cups of water to a boil in a large saucepan. Add the wild rice and bring the water back to a boil over high heat. Reduce the heat to medium and cook, covered, for . Drain off any excess water and set aside. Continue with remaining steps during this time.
