Tree Salad with Bacon and Walnuts
This salad is not for my sister, Kristen. Kris isn't a fan of trees, cauliflower trees and broccoli trees. But I love 'trees' and this salad with seasonal spring vegetables, ricotta, toasted walnuts and salty bacon makes me happy and is balanced to perfection with a tangy dressing.
Change the vegetables base on what's in season.
It's the perfect salad to take to your next BBQ, it will impress your friends.
Ingredients
- 2 cups broccoli (florets)
- 2 cups cauliflower (florets)
- 100 g green bean (Ends removed)
- ½ cup walnut
- 3 slices bacon (Sliced)
- 200 g mix lettuce leaf
- 100 g sugar snap pea
- 100 g ricotta cheese ()
- salt & pepper (To taste)
- olive oil
Dressing
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 tbsp mustard (I use seeded)
- ¼ lemon (Juiced)
- salt & pepper (To taste)
