Tree Salad with Bacon and Walnuts

This salad is not for my sister, Kristen. Kris isn't a fan of trees, cauliflower trees and broccoli trees. But I love 'trees' and this salad with seasonal spring vegetables, ricotta, toasted walnuts and salty bacon makes me happy and is balanced to perfection with a tangy dressing.

Change the vegetables base on what's in season.

It's the perfect salad to take to your next BBQ, it will impress your friends.

Ingredients

  • 2 cups broccoli (florets)
  • 2 cups cauliflower (florets)
  • 100 g green bean (Ends removed)
  • ½ cup walnut
  • 3 slices bacon (Sliced)
  • 200 g mix lettuce leaf
  • 100 g sugar snap pea
  • 100 g ricotta cheese ()
  • salt & pepper (To taste)
  • olive oil
  • Dressing

  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tbsp mustard (I use seeded)
  • ¼ lemon (Juiced)
  • salt & pepper (To taste)

Instructions

    Steam broccoli, cauliflower and beans for a few minutes, they should be cooked but still firm. Add a pinch of salt and pepper and set aside.

    Lightly toast the walnuts in a non-stick frying pan for a few minutes until browned and cool.

    Heat oil in the frying pan and fry off the bacon and cool.

    Meanwhile to make the dressing add vinegar, oil, mustard, lemon juice, salt and pepper together and mix. (nb: I use a salad dressing shaker to make the dressing, after adding the ingredients I just shake the container to mix)

    Add steam vegetables, lettuce, sugar snap peas, walnuts and bacon together. Add salad dressing and toss and crumble the ricotta on top.
