Traditional Italian Almond biscuits - easy to make and great to serve with coffee

Ingredients

  • 5 egg whites (Lightly Beaten)
  • 500 g ground white almond
  • 350 g caster sugar
  • 3 drops vanilla essence
  • 3 drops almond essence
  • 150 g glace cherry (Halved)
  • 150 g icing sugar

Instructions

    Preheat oven to 180 C and put baking paper on baking trays
  • 2
    Mix egg whites, ground almonds, sugar, vanilla and almond essence in a bowl and mix (will be sticky)

    Add icing sugar onto a chopping board.

    Roll mixture into walnut-size balls and coat in icing sugar. Flatten slightly in your hand and put on baking tray.

    Put a cherry on top of each biscuit (or if like me you don't like them, you can use an almond instead)

    Cook for - until just coloured
  • 7
    Eat!
