Whoops someone went overboard with the pulled pork. I had so much pulled pork, I had no idea what to do with it all until I discovered taco soup. Most of the taco soups recipes seem to use beef, so here's my version full of tasty pulled pork, beans, corn and topped with sour cream and corn chips, it's very tasty and the hint of chilli adds a great spice. Besides the pull pork everything comes straight from a can, so it's easy easy to prepare. This soup is no starter, it's a meal.

Ingredients

  • 500 g pulled pork (See instructions at http: / / www.meecook.com / #recipe / 38)
  • 1 packet taco seasoning
  • 1 cup water
  • 420 g canned mexican beans with chilli (undrained)
  • 420 g canned kidney bean (drained)
  • 840 g canned tomato (Chopped)
  • pickled jalapeños (sliced)
  • 420 g canned corn kernel ()
  • 1 handful fresh coriander (Roughly torn)
  • To Serve

  • sour cream
  • corn chip

Instructions

    In a large saucepan add pulled pork and taco seasoning, mix well.

    Add water, tomatoes, beans, corn and jalapeños and simmer for or until cooked through.

    Add torn coriander.

    Serve with a dollop of sour cream and corn chips.
