Spinach, leek & white bean soup

A hearty soup to have as a meal. NB: Silverbeet can be used instead of spinach, personally I like to use both.

Ingredients

  • 1 tb olive oil
  • 4 leeks (White part only, rinsed and sliced)
  • 2 cloves garlic (Chopped)
  • 1 l chicken stock (can use vegetable)
  • 800 g canned cannellini bean (Rinsed and drained)
  • 2 bay leaves
  • 2 teaspoons cumin
  • 100 g couscous
  • 1 bunch spinach (Rinsed and chopped)
  • salt & pepper (To taste)

Instructions

    In a large pot heat oil, add leeks and garlic, fry until tender for approximately

    Stir in stock, cannellini beans, bay leaves and cumin; bring to boil, reduce heat

    Add cous cous, cover and simmer for

    Stir in spinach and season with salt and pepper

    Serve immediately

    Optional: add in a chopped BBQ chicken prior to serving
