Spinach, leek & white bean soup
A hearty soup to have as a meal. NB: Silverbeet can be used instead of spinach, personally I like to use both.
Ingredients
- 1 tb olive oil
- 4 leeks (White part only, rinsed and sliced)
- 2 cloves garlic (Chopped)
- 1 l chicken stock (can use vegetable)
- 800 g canned cannellini bean (Rinsed and drained)
- 2 bay leaves
- 2 teaspoons cumin
- 100 g couscous
- 1 bunch spinach (Rinsed and chopped)
- salt & pepper (To taste)
