Smoky Avocado & Corn Salad

This salad is simple, but the dressing is rich and intense with a great smoky tang.

The dressing is amazing with corn and avocado; and acts as a amazing side to grilled seafood and meat.

Ingredients

  • 120 g rocket
  • 1 avocado (peeled and diced)
  • 420 g canned corn (drained)
  • 2 spring onions (sliced, white and light green bit only)
  • 50 g pepitas
  • Dressing

  • 1 clove garlic (crushed)
  • ½ tsp smoked paprika
  • 3 tbsps red wine vinegar
  • 3 tbsps olive oil
  • salt and pepper

Instructions

    In a large salad bowl arrange rocket, avocado, corn, onions and pepitas. a platter arrange the romaine hearts.

    Whisk the Smoky Vinaigrette together in a small bowl and then drizzle the vinaigrette over the salad. Serve immediately.
