Smashed avocado is a brunch favourite of mine. It is so easy to recreate at home, here is my version with lemon rind, salt, pepper and feta cheese.

It's amazing by itself or top with poach eggs, salmon or grilled mushrooms.

Ingredients

  • 2 slices toast
  • ½ avocado
  • 1 tsp lemon rind
  • salt & pepper
  • 1 tbsp feta (crumbled)

Instructions

Keep screen awake

    Prepare two slices of toast.
  • 2
    Scoop out the avocado and using the back of the spoon lightly spread the avocado (you want it to be chunky).

    Grate lemon rind over the avocado and sprinkle with salt and pepper.

    Add the crumbled feta over the top and if you desire also add a poached egg, smoked salmon or grilled mushrooms.
