You can't go wrong with beef and beer, add this perfect combination into a slow cooker and you're onto a winner.

These beef fajitas are so tasty and simple to prepare, simply rub meat in spices, sear it, throw it into the slow cooker, add beer, wait 6 hours, fry up onion and capsicum and there you have a Mexican feast for 6 to 8 people!

Ingredients

  • 750 g tri tip beef
  • 1 tbsp black pepper
  • 2 tsps salt
  • ½ tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • 1 tsp dried rosemary
  • 1 tsp olive oil
  • 2 bottles corona
  • 1 red onion (halved, sliced)
  • 1 red capsicum (sliced)
  • 1 yellow capsicum (sliced)

    Add all the spices into a bowl and mix well. Roll the meat in the spice mix and fully coast the beef.

    In a hot oiled pan, sear the beef on all sides to brown the meat.

    Set the slow cooker to a low setting, add beef and beer. The beef will take to cook, occasionally turn the beef.

    Remove the beef and allow to rest for . Tear the beef into strips.

    In a large oiled frypan, add onion and capsicum until the onion is transparent. Add beef and 1/2 Cup of the beer juices from the slow cooker and mix everything together.

    Serve with tortilla, salsa, sour cream, guacamole, beans and rice.
