Shish Tawook is one of our favourite dishes, whenever we go out for Middle Eastern Martin will always order this as his main. A few weeks ago we were in Abu Dhabi and ate Shish Tawook everyday so recreating this dish has been high on our radar since returning back home.

This version of Shish Tawook is really tasty, easy to prepare, requires 24 hours for marinating (but it's worth it) and then all you have to do is grill it on the BBQ.

If you don't like garlic maybe this dish isn't for you, there's a bit of garlic in the marinate (15 cloves!) and you serve it with toum, a really intense garlic sauce.

Ingredients

  • 1 kg chicken breast (Cubed)
  • 1 cup lemon juice
  • 15 cloves garlic
  • 6 tbsps greek yoghurt
  • 6 tbsps olive oil
  • 2 tbsps apple cider vinegar
  • 2 tsps ground white pepper
  • ⅓ tsp ground ginger
  • ½ tsp dried thyme
  • ⅓ tsp paprika
  • 1 tsp salt
  • 1 tsp tomato paste

    Add the cubed chicken into oven tray. Add remaining ingredients into a blender and blend until the garlic cloves are crushed and all ingredients are combined. Pour marinate over the chicken and ensure all pieces are covered. Wrap the tray in glad wrap.

    Refrigerate chicken for and soak 8 skewers in water overnight.

    Remove chicken from fridge.

    To make the skewers, add chicken cubes to skewer and squeeze cubes together. Brush skewers with marinate.

    Add skewers to a hot BBQ grill and grill for , turning every few minutes and basting with remaining marinate.

    in a warm pot add the skewers and allow the chicken to rest for .

    Serve with pita bread, toum and salad.
