It feels like a lifetime since Martin and I were in the UK, but one memory that is still strong is our meal at Mexican restaurant, wahaca, we loved their Pork Pibil tacos so much we ordered a second round of them.

This pulled pork slow cooker recipe is amazing, let the pork cook all day and by night serve it up with tacos, burritos or in a salad and you have a moorish meal. You will have a lot of pork with this dish so why not host a mexican dinner party.

Ingredients

  • 1.8 kg pork shoulder roast
  • salt & pepper
  • 3 tbsps olive oil
  • 2 tsps dried oregano
  • 1 tsp cumin
  • 1 orange
  • 1 white onion (roughly chopped)
  • 1 jalapeno (seeded, ribs discarded and chopped)
  • 5 cloves garlic (smashed, peeled and finely chopped)

Instructions

    Serve with tortillas

    Generously season pork shoulder with salt and pepper.

    In a small bowl add oil, cumin and oregano. Rub oil mixture all over the pork, add pork into slow cooker.

    In the slow cooker add onion, jalapeno, garlic and freshly squeeze orange juice. Add the remaining orange into the slow cooker.

    Cook on high for or low for . Turning the pork at least every hour.

    Remove the pork and shred with two forks.

    In fry pan add the shredded pork, the remaining juices from the slow cooker and some olive oil for a few minutes and lightly brown the meat.
