Plum, Honey and Almond Tart

This dessert is a great, simple, rustic way to 'tart up' your weekend.

It has to be the ultimate entertaining tart; easy to make (thanks to the fact there's no crust), a little different (thanks to the use of almond meal and flakes) and it's ability to make use lots of different seasonal fruits like plums, peaches, nectarines, figs or berries.

You must try the tart batter, it is so tasty, so make sure you leave plenty in the bowl after transferring the mixture into the tart tin.

Ingredients

  • 130 g unsalted butter (softed)
  • ¾ cup caster sugar
  • 1 tbsp lemon rind (finely grated)
  • 1 tbsp orange rind (finely grated)
  • 1 tbsp vanilla essence
  • 3 eggs
  • 1 ½ cups almond meal
  • ½ cup plain flour (sifted)
  • ½ tsp baking powder (sifted)
  • 1 cup flaked almond
  • 4 plums (quartered)
  • ¼ cup honey

Instructions

    Preheat oven to 160 degrees C. Lightly grease 28cm tart tin.

    Place butter, sugar, lemon and orange rind and vanilla essence in a bowl, using an electric mixer and beat for , or until light and fluffy.

    Add the eggs, one at a time, beating well after each egg.

    Add the almond meal, flour and baking powder and mix to combine Fold in the flaked almonds.

    Spoon into the tart tin and spread until smooth. Place plums into the almond filling, pressing down slightly.

    Place tart on a tray and bake for , or until golden.

    Remove from oven and while still hot, brush with honey. Serve with a dollop of double cream.

      I made this last night with peaches instead of plums - divine! The batter is unreal! And I may or may not be having some for breakfast right now...
