Mushrooms are easily one of my favorite sides for breakfast, but when I make these mustardy mushrooms it is all I want for breakfast. Since seeing these on my feedly feed a few months ago I've made these quite a bit.

Just serve with really fresh pita or bread and drizzle with a little olive oil.

Ingredients

  • 500 g button mushrooms (wiped clean and thinly sliced)
  • 2 cloves garlic (minced)
  • 1 knob butter
  • 1 tbsp olive oil
  • 1 tbsp wholegrain mustard
  • salt & pepper
  • ½ lemon (juiced)
  • 1 pinch cayenne pepper (optional)
  • 2 tbsps parsley (chopped)
  • 2 pita breads

Instructions

Keep screen awake

    Heat frypan to a medium-high heat, add butter and a olive oil. Add garlic until fragrant and add mushrooms, cook or until mushrooms are golden.

    Add mustard, cayenne pepper, salt and pepper, lemon juice and parsley.

    To serve place mushrooms over pita bread, drizzle in olive oil and roll up pita bread and enjoy!
