This has to be one of the best biscuits recipes from the Women's Weekly, a great treat with a coffee. I love the giant chocolate melt in the middle of the biscuit. Bake these the next time you know a friend is dropping by for a coffee.

Ingredients

  • 150 g butter (soften)
  • 165 g brown sugar (firmly packed)
  • 1 egg yolk
  • 2 tsps instant coffee
  • 1 tbsp hot water
  • 225 g plain flour
  • 1 tbsp cocoa powder
  • 20 dark chocolate melts

Instructions

    Preheat oven to 180 degrees C.

    Grease two oven trays; lined with baking paper.

    Beat butter, sugar, egg yolk and combined coffee and water in small bowl with electric mixer until smooth.

    Transfer mixture into large bowl, stir in sifted flour and cocoa, in two batches.

    Knead dough on floured surface until smooth.

    Roll level tablespoons of mixture into balls, place 5cm apart on trays, flatten slightly. Press 1 chocolate Melt into the centre of each biscuit.

    Bake for , cool biscuits on trays.
