Limoncello dessert

Yummy limoncello pudding by Elaine as endorsed by Master Chef Andrew Booth (award wining pizza chef Michelin star 3)

Ingredients

  • 500 g Mascarpone
  • 500 g Lemon curd (Best quality)
  • 2 Lemons
  • 100 ml Limoncello
  • 50 g Icing sugar
  • 8 Sponge fingers

Instructions

Keep screen awake

    Juice 1 lemon - no scraping on outside
  • 2
    Add to 50ml of limoncello (tested first)
  • 3
    Dip sponge biscuits into mixture and line in dish (or plastic box if you want to transport)

    In a small bowl, pour remaining liquid from sponge fingers and add the jar of lemon curd
  • 5
    Pour SOME (half) over the sponge fingers
  • 6
    In a mixing bowl, put the mascarpone cheese and whisk in the remaining lemon curd mixture
  • 7
    Add the juice of a lemon,50ml of limoncello and the icing sugar and whisk until smooth
  • 8
    Pour over the sponge fingers and chill for an hour (at least)

    Eat!!!!!

    Leave cork by side of bed to stop snoring wife (you will not get much sleep)
