Lentil Vegetable Soup
You may additionally add 15 ounces of your favorite beans, drained and rinsed for a heartier soup.

Ingredients
- 2 onions, finely chopped
- 6 carrots, finely chopped
- 8 white potatoes, finely chopped
- 32 ounces bagged brown lentil (Soaked for 10 hours in filtered water with lemon juice, vinegar or whey added)
- 32 ounces fire roasted tomatoes, diced
- 8 cups vegetable broth (add more broth or water if needed) (Substitute bone broth if desired)
- 3 cups spinach, finely chopped
- 1 pinch or as desired sea salt and pepper
