You may additionally add 15 ounces of your favorite beans, drained and rinsed for a heartier soup.

Ingredients

  • 2 onions, finely chopped
  • 6 carrots, finely chopped
  • 8 white potatoes, finely chopped
  • 32 ounces bagged brown lentil (Soaked for 10 hours in filtered water with lemon juice, vinegar or whey added)
  • 32 ounces fire roasted tomatoes, diced
  • 8 cups vegetable broth (add more broth or water if needed) (Substitute bone broth if desired)
  • 3 cups spinach, finely chopped
  • 1 pinch or as desired sea salt and pepper

    Combine all ingredients, except the spinach, and cook on low for .

    Add the spinach about before the soup is done.
