Lemon & Garlic Vegetables Stir Fry

This stir fry side is great; it's full of colour with greens, oranges, whites and purples; full of zest with the lemon; and flavour thanks to the mini garlic overload!

I tend to overcommit to my veggie stir frys, so the great things is about this dish is it also wonderful served cold as a salad.

Ingredients

  • 1 head Broccoli (Cut into florets)
  • ½ Cauliflower (Cut into florets)
  • 1 Carrot (Sliced)
  • ¼ Red cabbage (Thinly sliced)
  • 2 cloves Garlic (Crushed)
  • 1 tbsp Sesame seed oil (Plus extra to serve)
  • ½ Lemon (Juiced)

Instructions

    Add oil to a hot wok or frypan.

    Once oil is heated, add broccoli, cauliflower and carrot, stir fry for two to three minutes, veggies will be bright in colour and crispy.

    Add cabbage and garlic and stir fry for a further minute, add lemon juice.

    Serve in a large bowl and dress stir fry with a drizzle of sesame seed oil.
