Kale & Strawberry Salad

I've been admiring this salad on the Two Peas & Their Pod blog for almost twelve now and at the weekend I finally made it. I loved it so much I made it two nights in a row!

I love the crunch from the kale, the sweetness from the strawberries, the creaminess of the avocado, the saltiness of the feta and the tangy dressing.

This salad is a winner and a little different too, making it great to take to your next BBQ.

Ingredients

  • 4 cups kale leaf (torn and stems removed)
  • 1 pinch sea salt
  • 1 cup stawberry (sliced)
  • 1 avocado (halved and sliced)
  • ¼ cup feta (crumbled)
  • Dressing

  • 2 tbsps olive oil
  • 2 tbsps lemon juice
  • 1 tsp honey
  • ½ tsp poppy seed
  • salt & pepper (to taste)

    Wash the kale and pat dry it, by doing so you will find the kale becomes a lot more tender (Two Peas and their Pod (and lots of other blogs) recommend you sprinkle sea salt over the kale and massage the leaves, to help make the leaves tender and darker in colour).

    Meanwhile to make the dressing, in a small jar add all the dressing ingredients (oil, lemon juice, honey, poppy seeds, salt and pepper) and shake until mixed.

    In a large salad bowl add kale, strawberries and avocado, toss to combine.

    Crumble the feta over the salad and drizzle the dressing over the top.

    Serve as a standalone salad or top with freshly grilled chicken or calamari to create a meal.
