This dessert will impress, the beautiful layers are shown off in your favourite cocktail glasses. It's the ultimate entertaining dessert; tasty, showy and easy, all you need to do when guest arrive is to take it out of the fridge to serve. And did I mention tasty? This lemon cheesecake is tangy and light.

Ingredients

  • 250 g light ricotta cheese
  • 250 g light cream cheese
  • 1 lemon (zested and juiced)
  • 4 tsps palm sugar
  • 2 tsps unsalted butter
  • 1 cup almond meal

Instructions

Keep screen awake

    Mix ricotta, cream cheese, lemon zest and juice, and 2 tsp sugar until well combined.

    Melt butter and combine with almond meal and remaining sugar.

    Spoon almond-meal mixture evenly across the the bottom of the cocktail glasses. Top with cheesecake mixture. Refrigerate until ready to serve.

    Top with additional lemon rind.
