Hummus with ground beef and pine nuts

My gorgeous friend, Krystalyn gave me Neil Perry's cookbook, Easy Weekends as a house warming present last year when Martin and I moved in together.

I love this book it really inspires you to try new things and make amazing meals at home. The hummus with ground beef was the first recipe I tried from this book and it was amazing; garlicly hummus, toasted pine nuts and flavoursome beef.

Dinner can't get much better than this, just add a crunchy salad and warm pita bread.

Ingredients

  • 250 g minced beef
  • 60 ml extra virgin olive oil
  • ½ large red onion (very finely diced)
  • ⅓ tsp ground cinnamon
  • 1 lemon (plus extra wedges to serve)
  • 2 tbsps pine nut (toasted)
  • ½ cup flat leaf parsley ()
  • paprika
  • chilli flakes
  • pita bread (toasted)
  • Hummus

  • 400 g tinned chickpea (Drained and rinsed)
  • 1 lemon ()
  • 3 cloves garlic (crushed to a paste with salt)
  • 135 g tahini paste
  • salt & pepper
  • 85 g olive oil

    Heat 60ml of oil in a saucepan over a low to medium heat. Add the onion and cook gently for about until golden brown. Transfer to a bowl, add cinnamon and set aside.

    To make the hummus: Place chickpeas and 60ml of water into a food processor and blend until smooth. Add the juice of 1 lemon, the garlic paste, tahini and olive oil. Season to taste with sea salt and pepper. Spread the hummus over a large serving plate.

    In a frying pan, add the cooked onion and add the beef over a high heat. Use the back of a fork to break up the mince, season with salt. Cook for about until the mince begins to crisp, add pine nutes.

    To serve, spoon the mince over the hummus, and sprinkle with the parsley, paprika and chilli flakes. Add pepper and squeeze lemon juice over the beef. Serve with salad, pita bread and lemon wedges.
