This is another Seafood Tuesday regular meal of mine.

Baked salmon is super tasty and easy, after talking to many friends and playing with lots of ingredients this is my interpretation of green salad.

Ingredients

  • 300 g salmon fillet (about two fillets, deboned)
  • 2 tbsps honey
  • 1 lemon (½ the lemon thinly sliced, the other ½ juiced)
  • salt & pepper
  • oil spray

Instructions

    Cut two pieces of baking paper about 30 x 30 cm. Heat oven to 220 degrees C.

    Spray baking paper with oil an place on baking tray. Add salmon fillets.

    Drizzle fillets with honey and squeeze with lemon juice. Season salmon with salt and pepper and add two slices of lemon to each fillet.

    Fold the edges of the baking paper to form a parcel. Place salmon in the oven for .

    Take salmon out of the oven, flesh should be lightly pink in the middle.

    Serve with a green salad.

    Just made this again for the first time in ages, but swapped lemon for blood orange. It was so tasty!
