Fermented Vegetables

These crispy, sour, salty vegetables are highly addicting and an easy, economical way to maintain a healthy gut. These vegetables are important to include daily in your diet.

Ingredients

  • 1 cauliflower
  • ½ red onion
  • 1 red pepper
  • 1 bunch carrots
  • 1 head broccoli
  • 1 bunch dill
  • 1 bunch daikon radish
  • 3 beets

Instructions

Keep screen awake

    Chop up all vegetables.
  • 2
    Layer them in a mason jar.
  • 3
    Make brine by adding 1 1/2 tablespoons of sea salt per 2 cups filtered water.

    Add enough brine to cover all the vegetables
  • 5
    Add a cabbage leaf to the top of the jar to prevent contact with oxygen
  • 6
    Add airlock to mason jar and let sit at room temperature for 7 days
