It's just under seven weeks until Christmas and it's time to start planning the Christmas feast and baking. I'm also thinking about what to cook on Christmas morning, normally we have a champagne breakfast with fruit, but on Boxing Day last year I discovered Eggnog Pancakes and I feel this should be added to our Christmas breakfast tradition. These pancakes are not only tasty, but very festive and can be even more festival with a drop of your favourite rum or brandy.

Ingredients

  • 2 cups flour
  • 4 tsps baking powder
  • 0.5 tsps salt
  • 0.25 tsps nutmeg (freshly grated)
  • 2 eggs
  • 1.5 cups eggnog (plus extra to be added to syrup)
  • 2 tbsps butter (melted)
  • 0.5 cups maple syrup

    Preheat a frypan to medium-high heat.

    In a medium bowl combine the flour, baking powder, salt and nutmeg. Set aside.

    In another bowl, beat eggs, 1 1/2 cups eggnog and butter (and the optional booze!). Fold in the dry ingredients just until moistened and no large lumps remain. Don’t overmix the batter.

    Spray pre-heated frypan. Pour batter by 1/4 cupfuls onto the frypan. Turn over the pancakes when bubbles form on top and they turn light golden brown around the edges and bottom. Flip once and cook until the other side is golden brown, .

    Whisk syrup and remaining 2 tablespoons eggnog together and pour over hot pancakes along with additional butter.
