This is an amazing Christmas dessert with all the wonderful Christmas flavours of eggnog, cinnamon and Spekulatius (spiced cookies from the Netherlands).

A great dessert for any pre Christmas catch up with friends. I just need another BBQ before Christmas to have an excuse to make it again!

I have a feeling this will be my signature Christmas dessert over the coming years.

Ingredients

  • 24 spekulatius (blended in a food processor)
  • 3 tbsps unsalted butter (melted)
  • ½ tbsp sugar
  • 400 g cream cheese (softened)
  • ½ cup sugar
  • ½ cup eggnog (I use the one with cinnamon)
  • ½ tbsp cinnamon (plus extra to sprinkle on top)
  • 1 tbsp plain flour
  • 2 tsps vanilla
  • 1 egg

    Preheat oven to 180 degrees C and lightly grease a cheesecake pan.

    In a food processor, blend cookies to a fine crumb and combine with butter and sugar. Add mixture the cheesecake pan and bake for .

    In a large bowl mix add cream cheese and sugar until fluffy and smooth. Slowly add in the eggnog, cinnamon, flour, vanilla and salt, mixing until no lumps remain. Then add in the egg and lightly beat.

    Add mixture to the cheesecake pan and bake for until cook through (check with a skewer and if it comes out clean you're right to take it out of the oven).

    Allow to cool on a wire rack and transfer to the fridge to chill overnight (or a least a few hours).

    To serve sprinkle cinnamon on top of the cheesecake with berries.
