I was trying to be heathy so decided to make some home made muesli bars, after flicking through a number of my cookbooks the one that took my fancy didn't really fit into the health category. These Date and Oat Muesli Bars are more of a slice with a bit too much butter and sugar, but boy are they tasty.

After bringing some of these muesli bars into work, quite a few of the guys wanted the recipe, so here it!

Ingredients

  • 300 g dried date (Pitted and chopped)
  • 65 g currants
  • 500 ml water
  • 1 tsp vanilla extract
  • 1 lemon (zest finely)
  • 1 tsp cinnamon
  • 185 g plain flour
  • 2 tsps baking powder
  • ½ tsp ground cardamom
  • sea salt
  • 180 g brown sugar
  • 175 g butter (Chilled and diced)
  • 100 g rolled oat

    Preheat oven to 180 degrees C. Lightly grease a 20cm by 30cm baking tin and line with baking paper.

    Put the dates, currants and water into a saucepan and and bring to the boil. Reduce the heat and simmer fro , string occasionally, until the mixture is thick and jammy. Stir through the vanilla extract, cinnamon and lemon zest. Turn off the heat and allow to cool.

    Meanwhile, sift the flour, baking powder, cardamom and a pinch of salt together into a bowl, stir in the sugar and rub in the butter to form a crumbly dough; or pulse the mixture in a food processor until a dough forms. Mix through the oats.

    Press half the dough into the prepared tin. Spread the date mixture evenly over the surface and crumble over the remaining dough. Bake for until lightly golden. Leave to cool completely in the tin. Cut into rectangles to serve.
