Spanish paella with chicken and chorizo.

Ingredients

  • 2 large chicken breasts (Diced)
  • 1 chorizo (Sliced)
  • 1 red capsicum (Sliced)
  • 2 cups paella rice
  • 5 cups chicken stock
  • 1 pinch saffron
  • ½ teaspoon smoked paprika
  • 1 cup (Frozen peas)
  • 1 tomato (Diced)
  • 1 onion (Diced)
  • 1 green capsicum (Diced)

Instructions

    Add a drizzle of oil to pan and on low/medium heat. Fry capsicum and onion, add chicken, chorizo and stir until browned.

    Add the diced tomato, stir for one minute. Add smoked paprika and stir in.

    Add five cups of chicken stock, add rice then saffron. Stir and reduce heat to low to allow it to simmer for twenty mins. Do not stir!

    A few mins before it's ready drizzle a cup of frozen peas over the top to decorate. Once ready, cover with tea towel for 3+ minutes.

    Ready to serve! Paella should ideally have a light brown or slightly burnt crust on he bottom.

      It's delicious when you cook it. I have all the ingredients and paella dish,(thanks to Dan & Loren for Mother's Day) and will attempt to cook it. Fingers crossed!

        Yes it was a success! Even my parents enjoyed it, and they are nearly hitting 90. ( so used to meat & mashed pot) hehe!
