It's almost summer here in Melbourne and that means BBQ season!

It wasn't so long ago we were in the UK, enjoying an English summer and sharing many BBQs with Martin's family. This recipe comes from Martin's aunty Carol, who put on an amazing BBQ spread for us, this chicken dish was a highlight.

Now that the weather is warming up, this is a great BBQ dish to have during the week on those warm evenings (with a glass of wine in your hand of course). I love the citrus flavours and the sweetness from the honey, it's so simple. Just add a salad and you have a healthy, tasty and easy to prepare meal.

Ingredients

  • ¼ cup lemon juice
  • ¼ cup orange juice
  • ¼ cup honey
  • 2 tbsps olive oil
  • 1 tbsp dijon mustard
  • ¼ tsp dried thyme
  • ¼ tsp dried oregano
  • 4 chicken breasts

    In a large bowl add the juices, honey, oil, mustard and dried herbs. Lightly whisk.

    Slice the chicken breasts into smaller pieces (we normally cut the breast into four pieces) and add the chicken to the marinate. Marinate the chicken between and in the fridge.

    On a hot BBQ grill, cook the chicken for approximately , turning the chicken twice each time you turn the chicken baste it in the remaining marinate.

    Serve with a salad.
