Christmas 2013 and Martin & I nailed Christmas turkey.

While he is busy coding up meecook, I'm going to take some (or most) of the glory of our Christmas turkey. Our friends couldn't get over how moist and tasty it was.

This turkey was made with love, stuffing, butter, garlic, lemon and time.

Ingredients

  • 7 kg turkey (neck removed)
  • 100 g butter
  • 5 cloves garlic (cut into spears)
  • 1 lemon (halved)
  • 1 serving stuffing (I use a pork and bacon stuffing mixture -http: / / www.meecook.com / #recipe / 57)
  • salt & pepper
  • 5 cloves garlic (whole, skins removed)

    Pat dry the turkey and place it in a large foil tin or baking tray. Lightly separate the skin from the breast meat and add butter under the skin. Pre heat the oven to 180 degrees C.

    In the turkey cavity add a serving of the pork and bacon stuffing and fill the rest if the cavity with half a lemon and 3 cloves of garlic. Also place a garlic clove between each leg.

    Truss a turkey (we go to YouTube for a reminder each year) and rub the turkey with olive oil and salt & pepper. Place turkey in the oven uncovered and cook for to allow the skin to slightly crisped up.

    Take turkey out of the oven and with a skewer make 20 small holes across the breast and drumsticks and insert a garlic clove speara into each insertion. Baste turkey with pan juices, cover pan with foil and return to the oven.

    Continue to cook the turkey for another and baste every . After the bird has been in the oven for 4:, remove foil and continue to cook for a further to golden up the skin.

    Remove from oven and wrap turkey in a towel and let it rest for before carving the bird (again go to YouTube for a reminder).

    Serve with all your Christmas favourites.

    This turkey recipe was another success at our early Christmas lunch yesterday, people were surprised that you can have such a large turkey so moist and infused with so much favour!
