Chocolate devil's food cupcakes

In a word - indulgent.

Chocolate devil's food cupcakes are rich, its chocolatey goodness at its finest, but you will only want one.

Ingredients

  • 0.5 tbsps lemon juice ()
  • 110 ml full cream milk
  • 110 g plain flour
  • 0.5 tsps bicarbonate of soda
  • 55 g unsalted butter (room temperature)
  • 125 g caster sugar
  • 1 large egg
  • Icing

  • 125 g plain chocolate (Broken into pieces)
  • 1 pinch salt
  • 1.5 tbsps caster sugar
  • 150 ml sour cream

    Pre heat oven to 180 degrees C.

    Line a muffin tin with 12 patty pans spray with a oil spray.

    Sift flour, bicarb soda and coca into a bowl.

    In a different bowl cream the butter and half the sugar together until light and fluffy. Beat the egg, follow by the remainder of the sugar.

    In a separate container add mild and lemon juice.

    Beat in the flour and cocoa mixture into the butter bowl, a third at a time. Alternate with a third of the soured milk mixture, until everything is mixed in.

    Spoon the mixture into the patty pans. Add cupcakes into the oven for , until firm and spring to the touch.

    Remove from oven, allow to cool on a wire rank to cool.

    To make the icing, melt the chocolate in a heatproof bowl over a saucepan of simmering water. Stir until chocolate is melted. Whisk in salt, sugar and sour cream, remove from heat. Leave to cool for .

    Using a palette knife, swirl the icing over the tops of the cupcakes. Decorate as desired.
