Hot summer-like days in autumn are brilliant, barbequing at 10am on a public holiday is pretty special too, but I have to say caramelising fruit especially something as sweet as pineapple is amazing.

I love caramelised pineapple, it is a simple snack and a moorish breakfast.

Ingredients

  • 6 skewers (soaked overnight)
  • ½ pineapple (cut lengthways into 6 pieces)
  • 1 tbsp brown sugar (plus extra for dusting)
  • 1 tbsp honey

Instructions

Keep screen awake

    Turn on barbeque or grill to a very high heat.

    Place skewers into each pineapple slice. Sprinkle pineapple with brown sugar on each side and drizzle with honey.

    Place skewers on a hot grill, grill each side of the pineapple for , until pineapple is lightly charred and golden brown.

    To serve sprinkle with brown sugar, it is also really tasty with yogurt and mint.
