D.O.C. Pizza and Mozzarella Bar in Carlton is one our favourite restaurants and every time we, go we order the Buffalo Mozzarella with tomato & Pesto as a starter. It's amazing.

We love this dish so much we now re-create it at home every time we have family and friends over for pizza. The key to this dish is fresh tomato and a good quality buffalo mozzarella, we get our mozzarella from D.O.C's deli.

This is by far my favourite starter to prepare at home for dinner parties.

Ingredients

  • 1 tomato (thickly sliced)
  • 2 tsps olive oil
  • 1 ball buffalo mozzarella
  • 1 tbsp pesto
  • bread stick biscuit (to serve)

Instructions

    Heat oven at 180 degrees C. Place tomato on a baking tray and drizzle with olive oil. Cook tomato in the oven the oven for , you just want to warm the tomato up.

    Meanwhile, arrange serving platter with buffalo mozzarella and bread sticks.

    Remove tomato from oven and drizzle with pesto. Add to serving platter and eat straight away.
