BBQ Quesadillas with Chicken and Beans
I have Amin to thank for this recipe inspiration, every year he is the head chef for our team's End of Year Christmas BBQ. Last year he made amazing Quesadillas on the BBQ, since Christmas I've been trying to re-create them and here's my version, a filling lunch alternative to the home made toasted sandwich.
I love the combinations of refried beans, chicken, avocado, salsa and melted cheese; but the great thing about this dish is you can use anything you like from chorizo, to caramelised onion, corn and even add some heat with jalapeños.
Add what you want to yours and do what I do at home, wrap the quesadillas in foil and write who it's for prior to barbecuing so theirs no surprises when eating.
Ingredients
- 8 flour tortillas
- 435 g canned refried bean (I use the beans with chilli)
- 1 cooked chicken breast (or ½ a pre cooked BBQ chicken, cubed)
- 2 spring onions (Sliced)
- 1 avocado (Cubed)
- 150 g salsa
- ¾ cup tasty cheese (Grated)
