The recent wave of hot weather hasn't been friendly to my fruit bowl and I'm left with two sad looking bananas, the type of bananas that are fantastic to use for banana muffins, cookies, breads and cakes.

It's been ages since I made a banana bread and I'm craving it, but I'm also trying to be good. Thank god for google is all I can say, I found a tasty banana bread recipe that doesn't contain butter and better still it contains my current favourite fruit, dates.

I love this loaf and the dates really puts a great twist on your stock standard banana cake. This is my new go to banana bread recipe, spread it it a little whipped ricotta and you have a wonderful recipe.

Ingredients

  • 300 g self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tsp ground nutmeg
  • 200 g dates (Pitted and chopped)
  • 115 g caster sugar
  • 250 ml milk
  • 2 eggs
  • 2 bananas (Mashed, about 1 cup)

    Preheat oven to 180°C. Line a 24 x 13.5cm loaf pan with non-stick baking paper.

    In a large bowl sift the flour, bicarbonate of soda and nutmeg, then stir through the dates and sugar.

    In another bowl combine the milk, eggs and banana, mix together. Fold into the date mixture until well combined.

    Pour loaf mixture into the pan.

    Bake for or until a skewer inserted into the centre of the loaf comes out clean. Cool for . Turn out onto a wire rack to cool completely.

    Slice the loaf into 12 and serve with the butter or whipped ricotta if desired.

      I made this again today for the first time in ages, it has to be one of the best banana bread recipes. Bring on morning tea tomorrow!
