Balinese Grilled Fish Salad - Ikan Panggang Sambal Matah

I can't believe it's been three years since Kate, Megs and I were in Bali and undertook the fantastic cooking class at Cafe Wayan with Ana.

This salad is a winner, light and flavoursome. Have it as a main with a green salad and rice or as a part of a Balinese feast.

Ingredients

  • 300 g snapper ()
  • 1 tbsp coriander seed
  • 1 Thumb size turmeric
  • 1 tbsp lemon juice
  • salt & pepper
  • 2 tbsps oil (not olive)
  • Balinese Dressing

  • 3 tbsps olive oil
  • 4 shallots (peeled and finely chopped)
  • 2 cloves garlic
  • 2 red chillies (seeded & finely sliced)
  • ½ tsp fish sauce
  • 1 lime (juiced)
  • 1 stalk lemon grass

Instructions

    Marinate the fish with coriander, tumeric, lemon juice and salt & pepper for .

    Grill the fish for , on each side. Set aside and cool.

    In a bowl add oil, shallots, garlic, chilies, fish sauce and lemon grass. Season with salt and lime juice.

    Shred the fish and add it to the dressing and mix well.
