Avocado and Goat's Cheese Crostini with Smoked Salmon

This is my favourite appetizer to prepare, it contains some of my favourite ingredients; avocado and goats cheese and because it's Easter I've topped my crostini with smoke salmon (in reality I always top these with smoke salmon!).

I discovered this recipe in one of my mum's cookbooks about five years ago and I've been making these ever since.

What I love about this recipe is it's really easy to take to BBQ's, just assemble when you arrive at your friends house, it will only take a few minutes to plate up.

Ingredients

  • 1 avocado
  • 150 g goat's cheese
  • 1 lemon (Zested and Juiced)
  • 1 tbsp olive oil
  • salt
  • tabasco (to taste, I use a few drops)
  • 1 bread stick
  • smoke salmon (to serve)

Instructions

Keep screen awake

    Place Avocado, cheese, zest, juice and oil in a food processor or blender; pulse to a smooth puree.

    Add salt and tabasco to taste.
  • 3
    Spoon topping onto bread stick slices and top with smoke salmon.
