This week it was my turn to chair my team's meeting, as a result I also had to bake for the lovely Retail Marketing ladies, I decided to make my date & oat slice, but Kate in my team is on a paleo diet and I didn't want her to miss out on dates so I had to put my thinking cap on...

A few months ago the beautiful Krystalyn got me onto dates stuffed with peanut butter, on a paleo diet peanuts are out, so what's just as tasty alternative to peanut butter? Almond butter!

This recipe is super easy, but BEWARE your blender/food processor won't like it, mine was smoking by the end of it and my fingers were hot from the blender overheating (a few days on and it isn't sounding so good either!).

So is it worth it? It sure is and make sure you stuff your dates with the almond butter, the combination is incredible!

Ingredients

  • 250 g almonds
  • 1 pinch salt

    Pre heat oven to 180 degrees C and line a baking tray with baking paper.

    Spread the almonds out on the baking tray into a single layer and roast for five minutes, shake the baking tray and continue to roast for a further five minutes.

    Add the almonds to the food processor with a pinch of salt. On the highest setting, blitz for around , the mixture often sticks to sides so push it down from time to time with a spatula.

    Almonds will first look like almond meal, then into a ball, then into a thick liquid and keep processing until a thin layer of oil begins to rise to the top (according to The Paleo Network, at this stage the nuts have released their natural oils, and at the optimum for taste, texture and digestion).

    Pour the almond butter into a sterilise jar, then keep in the fridge.

    Serve with anything you wish, my suggestion is to stuff the almond butter in dates, simply cut them slightly to remove the pip and stuff the date.
