Serves 8

Super easy but very good soup.

Ingredients

  • 1 tbsp EVOO
  • 1 pound ground sausage
  • 1 onion, chopped
  • 2 medium potatoes, peeled and cubed
  • 6 cups chicken broth
  • 2 stalks kale
  • ¾ cup heavy cream
  • 3 cloves garlic
  • parmesan cheese for garnish
  • Salt and pepper to taste

Instructions

Keep screen awake
  • 1
    Brown sausage with EVOO. Add onions and garlic. Saute .
  • 2
    Add potatoes and broth. Simmer .
  • 3
    Add chopped kale and cream. Simmer 5 more minutes.

    Season with salt and pepper.

    Serve with parmesan cheese.
  • 6
    Salad and sourdough bread are a good accompaniment.
