Veracruz Style Tilapia

Ingredients

  • 4 tbsps olive oil
  • 2 red peppers (cored and cut into thin strips)
  • 1 large onion (halved and sliced)
  • 1 can stewed tomatoes ((14.5 oz))
  • 8 oz yellow or red cherry tomatoes ((or a mix of both) halved)
  • 4 cloves garlic (chopped)
  • ¼ cup pepperoncini (sliced)
  • ½ tsp salt (plus a pinch)
  • ¼ tsp freshly ground black peppe (plus ⅛ tsp)
  • 4 small tilapia ((about 1 ½ lbs))
  • 2 tbsps fresh lime juice
  • ¼ cup cilantro (coarsely chopped)

    Heat oven to 350 degrees. In a large lidded skillet, heat 3 tbsp oil over medium heat. Add red peppers ad onion and saute . Stir in stewed tomatoes, cherry tomatoes, garlic, pepperoncini, 1/2 tsp salt and 1/4 tsp pepper. Cover and cook , stirring occasionally.

    Spoon half of the pepper mixture into a 13 x 9 x 2 inch baking dish. Top with tilapia. Drizzle lime juice over fish and sprinkle with half the cilantro, a pinch of salt and 1/8 tsp pepper. Top with the remaining pepper mixture and bake for or until fish flakes easily with a fork. Top with remaining cilantro and drizzle with 1 tbsp olive oil before serving.
