Tilapia with Tomatoes

Inexpensive, low calorie and easy to prepare

Ingredients

  • 4 tilapia fillets
  • 4 medium tomatoes (peeled and chopped)
  • 2 tsps olive oil
  • 1-½ tsp dried thyme
  • ¼ cup black olives, diced
  • 2 cloves garlic, minced
  • ½ cup ed onion, diced
  • 1 tsp lime juice

Instructions

    Preheat oven to 400 degrees. Spray baking dish with vegetable spray. Arrange fillets in baking dish large enough that they do not overlap.

    Mix remaining ingredients in bowl. Spoon tomato mixture evenly over fillets.

    Bake uncovered until fish is flakey.
