Ingredients

  • 1-2 lbs Shrimp (peeled, deveined jumbo, tails on & butterflied)
  • 3-4 Eggs (beaten for dipping)
  • ⅔ cup Flour
  • ⅓ cup Bread crumbs (Or use Panko crumbs)
  • ⅔ cup Coconut (shredded)
  • 1 can Coconut Cream
  • 1 Zest Lime
  • 1 Tbls. Lime Juice
  • 1 dash Salt & Pepper
  • 1 tsp Cilantro
  • ⅓ cup Coconut
  • 1 tsp Ginger
  • 1 Tbls. Thai Chili Hot Sauce

Instructions

    Flour shrimp,egg wash. Having mixed the coconut and breadcrumbs, roll shrimp into that mixture coating shrimp.

    Saute' in a frying pan with some Extra virgin olive oil. , till done. Set aside.

    Combine Coconut Cream,Chili sauce,Lime Zest, Lime Juice,Salt & Pepper, Cilantro, Coconut and Ginger.

    Then pour over the cooked shrimp and serve with rice or pasta or even by itself.
