we had this casserole about 6 times a year, one of my mother's favorites, I have loved this recipe for 55 years. feeds a large family and is inexpensive.

Ingredients

  • 1 pound lean ground beef
  • 1 onion diced ¼ inch
  • 6 ribs celery diced ¼ inch
  • 1 bell pepper diced ¼ inch seeds and all
  • 6 cloves fresh garlic diced fine
  • 1 tsp salt
  • 1 tbsp chili powder
  • 2 tsps cumin ground
  • ¼ tsp black pepper
  • 1 tbsp tomato paste
  • ¼ c cilantro diced
  • 12 ounces sliced black olives
  • 1 can 15 oz whole kernel corn not drained
  • 16 oz tomato sauce
  • 15 oz diced tomatoes in juice
  • 2 c water
  • 1 10 inches jalapeno corn bread
  • 1 c A.P. flour
  • 1 c cornmeal
  • 1 tbsp baking powder
  • ½ tsp salt
  • 4 tbsps sugar
  • 3 jalapenos seeded and diced fine (optional)
  • 2 eggs beaten
  • 1 ¼ c milk
  • ⅓ c oil

    corn bread. place all dry ingredients in a bowl and mix well. pour liquid ingredients and jalapeno if using, into dry ingredients and mix well. pour corn bread in 10 inch cast iron skillet oiled and heated, bake at 350 until browned, about . remove from pan and set aside.

    brown ground beef in Dutch oven, drain off fat. add onions, celery and bell peppers and cook about . add remaining ingredients except cornbread and simmer for about uncovered. press cornbread into meat mixture and bake for at 350. Serve hot. place a piece of cornbread on plate and ladle some filling over the top.
