Sweet Potato Casserole

Ingredients

  • 3 cups Sweet potatoes, cooked and mashed (Can use a 29 oz can, drained)
  • 2 Eggs, beaten
  • ½ cup Milk
  • ¼ cup Sugar, white
  • ½ cup Sugar, brown
  • ½ tsp salt
  • 1 tsp Vanilla
  • 4 tbs Butter, melted
  • 1 cup brown sugar (topping)
  • 1 cup chopped pecans (topping)
  • ⅓ cup flour (topping)
  • ⅓ stick butter, melted

Instructions

Keep screen awake

    Mash sweet potatoes in large bowl, beat in sugars. Add eggs and blend until creamy.

    Mix milk, vanilla, salt, and melted butter together.

    Pour milk mixture into sweet potato mixture and blend well.

    Pour into a 2 quart casserole dish (no need to grease casserole dish)

    For topping, blend flour and brown sugar. Add pecans. Add Melted butted and blend completely. Sprinkle on top of casserole
  • 6
    Bake in a 350° oven for or until bubbly.
