Sweet Potato Bread

Ingredients

  • 1 cup Sugar
  • ½ c. Oil
  • 2 Eggs
  • 1 ¾ c. flour
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • ⅓ c Water
  • 1 c. Cooked and mashed sweet potatoes
  • ½ c. Pecans or walnuts

    Combine sugar and oil; beat well. Add eggs and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes. This is the basic recipe. It males a 9 x 5 loaf pan. I NEVER make just 1 recipe, I always double it. It freezes very well. I have very small individual mini bread pans and a double recipe makes 12 - 14 of the mini loaves. Sometimes I sprinkle a little brown sugar on top
