Sweet Pecan Cookies
A light cookie with the perfect balance of flavors. Great to enjoy with your coffee in the morning or crumble over a scoop of vanilla ice cream drizzled with chocolate syrup. It's hard to eat just one.
Ingredients
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt (prefer groud-up seasalt)
- 1 ¼ cups butter (2 & ¼ sticks room temp)
- ½ cup granulated sugar
- 1 cup packed brown sugar
- 1 tsp vanilla extract
- 2 lg eggs
- 1 cup plain pecans (finely ground (set aside))
- ¾ cup whole pecans (roasted lightly salted from trader joes) (chopped in big chunks then set aside)
