Sweet Pecan Cookies

A light cookie with the perfect balance of flavors. Great to enjoy with your coffee in the morning or crumble over a scoop of vanilla ice cream drizzled with chocolate syrup. It's hard to eat just one.

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt (prefer groud-up seasalt)
  • 1 ¼ cups butter (2 & ¼ sticks room temp)
  • ½ cup granulated sugar
  • 1 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 lg eggs
  • 1 cup plain pecans (finely ground (set aside))
  • ¾ cup whole pecans (roasted lightly salted from trader joes) (chopped in big chunks then set aside)

    PRE-HEAT OVEN for 350 COMBINE: flour, baking soda & salt in bowl (set aside). BEAT butter, granulated sugar, brown sugar and vanilla extract until creamy. ADD one egg at a time while beating, then add the finely ground pecans until smooth. Gradually beat in the flour mixture. Stir in the roasted chopped pecans.

    DROP rounded teaspoon onto un-greased baking sheets. PINCH a few granules of salt between your fingers and sprinkle a few on each cookie.

    BAKE: or until golden brown. COOL on baking sheets for . Remove to wire cooling racks until cooled completely. Enjoy!
