Green bell pepper halves stuffed w/sweet Italian sausage & rice

Ingredients

  • 3 green bell peppers (sliced in ½, deseeded)
  • 2 sweet Italian sausages (casing removed, cooked)
  • 10 black olives (Fresh cured (green in color), sliced)
  • 2 servings rice / grain medley (cooked)
  • 7 parsley leaves (finely chopped)
  • 4 basil leaves (finely chopped)
  • 1 garlic clove (small, finely chopped)
  • 1 pinch crushed red pepper flakes
  • 2 pinches black pepper
  • 1 pinch salt
  • 1 egg (beaten)
  • 3 slices cheddar cheese

Instructions

Keep screen awake

    Preheat oven to 375*

    Mix sausage, olives, rice/grain medley, parsley, basil, garlic and crushed red pepper flakes in a bowl, mix egg in last

    Stuff green bell peppers w/ mixture
  • 4
    Top with cheddar cheese
  • 5
    Brush olive oil on bottom of stuffed peppers
  • 6
    Place stuffed peppers in a glass baking dish

    Bake covered for

    Uncover and bake for longer (depending on size of peppers)
