Spiced Apple Cake

This recipe makes good use of the slightly less than perfect windfall apples. It can be eaten hot or cold, on its own or served with custard or cream.

Ingredients

  • 1 lb cooking apple (peeled and chopped)
  • 1 lemon (zest and juice)
  • 4 oz butter or margerine
  • 4 oz soft light brown sugar
  • 2 eggs
  • 4 oz self-raising flour
  • 1 tsp mixed spice
  • Topping

  • 2 oz soft light brown sugar
  • 2 oz butter
  • 3 oz rolled oat
  • 1 tsp cinnamon

Instructions

    Soak the chopped apples in the lemon juice and zest
  • 2
    Grease and line a 7 inch cake tine (deep)

    Make the topping by melting the butter and sugar together in a saucepan over a low heat

    Stir in the rolled oats and cinnamon
  • 5
    Put mixture into cake tin and press down
  • 6
    Make the sponge by creaming the butter/margarine and sugar together

    Beat in the eggs

    Fold in the self-raising flour and mixed spice

    Finally fold in the apples

    Put the mixture into the cake tin and place it in a pre heated oven at 180°C. The cake should take approximately to cook and will shrink slightly away from the edges of the tin when it is ready.
