Spiced Apple Cake
This recipe makes good use of the slightly less than perfect windfall apples. It can be eaten hot or cold, on its own or served with custard or cream.
Ingredients
- 1 lb cooking apple (peeled and chopped)
- 1 lemon (zest and juice)
- 4 oz butter or margerine
- 4 oz soft light brown sugar
- 2 eggs
- 4 oz self-raising flour
- 1 tsp mixed spice
Topping
- 2 oz soft light brown sugar
- 2 oz butter
- 3 oz rolled oat
- 1 tsp cinnamon
