Shrimp & Chinese Pea Pods

Ingredients

  • 1 ½ c. water (cold)
  • 1 ½ c. wine (dry white)
  • 3-4 peppercorns
  • 1 ½ bay leaf
  • 4-5 slices lemon
  • 1 ½ lbs shrimp (cleaned & deveined)
  • ½ lb pea pods (blanched)
  • 1 pepper, whole (red [Optional])
  • 1 leek (Optional)
  • Watercress Sauce

  • 1 ½ c. packed leaves watercress
  • 8 oz cream cheese (softened)
  • 1 ½ tbsps lemon juice
  • ¼ tsp salt
  • ¼ c. mayonnaise
  • ¼ c. sliced green onion

Instructions

Keep screen awake

    Put water, wine, peppercorns, bay leaves, & lemon in saucepan & bring to boil.

    Add shrimp to saucepan, reduce hit, & simmer .

    Drain shrimp & chill.

    WATERCRESS SAUCE: Put sauce ingredients into food processor/blender & blend well. Chill.

    When ready to serve, wrap a pea pod around each shrimp.

    If desired, cut pepper & leek into thin strips. Garnish each shrimp with pepper strip; tie pepper & pea pod onto shrimp with leek strip.

    If not using pepper & leek , use wooden toothpick to attach pea pod to shrimp.

    Serve with WATERCRESS SAUCE.
