- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp garlic powder
- ¼ tsp salt
- ⅛ tsp pepper
- 2 cups cooked rice
- 2 handfuls fresh spinach, torn in pieces
- 1 mango, chopped
- ¼ red onion, chopped fine
- 1 jalapeño, seeded and chopped (optional)
- ¼ cup chopped fresh cilantro (or 1 Tbsp dried)
- 1 lime, juiced
- 1 tomato
- 1 avocado
