Shrimp and Avocado Bowl with Mango Salsa and Lime Chili Sauce

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 2 cups cooked rice
  • 2 handfuls fresh spinach, torn in pieces
  • 1 mango, chopped
  • ¼ red onion, chopped fine
  • 1 jalapeño, seeded and chopped (optional)
  • ¼ cup chopped fresh cilantro (or 1 Tbsp dried)
  • 1 lime, juiced
  • 1 tomato
  • 1 avocado

    Make Salsa: Chop mango, tomato and red onion. If using jalapeño, seed and chop fine. Mix all together with 1 Tbsp line juice, cilantro, salt and pepper. Set aside. Make Lime Chili Sauce: Mix 1/4 cup mayonnaise, 2 tsp sriracha sauce, 1 Tbsp lime juice, 1/2 tsp garlic powder, 1 tsp honey. Whisk until blended well.
