Salmon Cakes

These quick and easy cakes make a hearty appetizer or a light lunch.

Ingredients

  • 14 oz Salmon
  • ⅔ cup Onion / Pepper Mix
  • ½ cup Mayo
  • 2 tbsps Lemon Juice
  • ¼ tsp Seasoning Salt
  • ¼ tsp Cajun / Creole Seasoning
  • 2 Eggs (Beatan)
  • 1.5 cups Dry Bread Crumbs
  • 3 tbs Butter

Instructions

    In mixing bowl, combine all the ingredients except bread crumbs and butter
  • 2
    Add in 1/2 cup of bread crumbs. Mix, then add a tablespoon of bread crumbs until the desired consistency.

    Melt butter in a pan.

    combine salmon mixture into a patty and roll in remaining breadcrumbs.

    Fry them in the butter for about per side.
